Hollowpoint Porkapalooza Volusia Top GunThe verdict is in and everyone loved the Porkapalooza Bacon, Pork & Rum Pairing Dinner! We'd like to thank Double Barrel Grill at Volusia Top Gun for helping bring our concept to life. They went above and beyond to accommodate our menu requests and the service was impeccable on every level.

It was a pleasure working with Kelly and Paige, who helped create the menu & drink pairings, along with Clay and Thomas who prepared the meal, and Sammie who served our guests throughout the evening. 


 

You Can Never Have Too Much Bacon...or Rum...

Our culinary experience began with Spiced Rum Bacon Jam on baguette slices and crackers paired with a rum spritzer. 

​The second course was Pork-3-Ways with a layer of slow-cooked pork belly and smoked pork shoulder wrapped in hardwood bacon and paired with White Madras rum punch.

Just so you know, Pork-3-Ways is always on the menu at Double Barrel Grill & we highly recommend ordering it.

Scratch-Made, Freshly-Prepared = Porkalicious Goodness

The third course was char-grilled Pork Brisket Steak with an apple & whiskey compote and roasted potatoes paired with Rum Mermaid Water. 

 

The fourth course was scratch-made, freshly-churned Rum & Candied Bacon Ice Cream garnished with a handcrafted chocolate bullet and paired with the Tipsy Swine.

Each guest received a gift bag filled with various types of chocolate covered bacon & handmade Buckeyes (aka - peanut butter balls). Bacon flavors included: Applewood with Ancho Chili and dipped in white chocolate; Hickory Smoked with milk chocolate; and Cherrywood with dark chocolate.
